QUICK, EASY -N- FAST ORANGE RICE
1 cup jasmine rice
2 cloves garlic, chopped
1 tsp. fresh thyme
1 tsp. virgin olive oil
1/2 tsp. salt
1 orange, juiced, peel grated
water
Heat rice, garlic, thyme, oil, salt and in a saucepan over medium-high heat. Cook, stirring, until rice turns pale golden (3-5 minutes).
Add water to orange juice to make 2 cups and add to rice, stirring in 1 teaspoon rind.
Bring to a boil, cover and reduce heat and cook over low heat until fluffy (about 20 minutes).
