CROCKPOT CHALUPA MEAT
3 lbs. pork roast
1 lb. dried pinto beans
1 small can chopped green chili peppers
2 cloves garlic, crushed
2 Tbsp. chili powder
1 Tbsp. cumin powder
1 Tbsp. salt
1 tsp. Mexican oregano
water
Put everything in a crockpot; cover beans with water and cook overnight on LOW.
In the morning, remove the roast, de-bone and shred.
Return meat to pot, stir and continue to cook on LOW until time to serve.
Serve topped with shredded cheddar cheese, chopped onions, diced tomatoes, shredded lettuce and Fritos. You can also spice it up with salsa or Tabasco sauce.
