Recipe: Simplest of Italian Pastas

SIMPLEST OF ITALIAN PASTAS

It's just butter and cheese. The trick to a memorable pasta is using a really good butter (I love the fresh, rich taste of organic butter) and really good grating cheese.

Drain your pasta and return it to the pot over low heat, toss it with a generous amount of butter until it glistens and is amply coated. add some grindings of fresh pepper and then toss with grated cheese to taste. it is "simply" delicious and taught to me by Enrico & Lillie, who have moved back to Italy.
