Recipe: Topping for Focaccia or Italian Bread
Pizza/FocacciaTOPPING FOR FOCACCIA OR ITALIAN BREAD
6 tbsp. extra virgin olive oil
4 tbsp. balsamic vinegar
1 clove garlic, minced
salt
freshly ground pepper
1/4 lb cherry tomatoes, yellow, halved
1/4 lb cherry tomatoes, red, halved
6 oz. mozzarella, smoked mozzarella or scamorza, coarsely grated
1/4 cup basil leaves, thinly sliced
In a bowl, whisk together the oil, vinegar and garlic. Season with salt and pepper. Add cherry tomatoes and toss together.
Heat broiler.
Place cheese on top of focaccia or half loaf of Italian bread (toasted) or slices of toasted bread.
Place under broiler until cheese is melted and crust is golden.
Remove from oven and top with tomato mixture and basil. Serve immediately.
