Spicy Supper Omelet
1/2 pound pork sausage
2 cups frozen hash browns(cubed type work best)*
1/2 teaspoon salt
1/3 cup chopped green onions, green & white parts
6 eggs
1/3 cup water
1/4 teaspoon salt
*you can substitute 2 cups frozen o'brien-type hashbrowns(onions and peppers are mixed in)if so, omit green onions.
Crumble sausage into a skillet. Cook over medium high heat for 5 minutes, stirring occasionally. Add potatoes, 1/2 teaspoon salt and onions. Cook an additional 5 minutes. Mix eggs, water and 1/4 teaspoon salt with fork. Pour over potato mixture in skillet. Mixture should set at edges at once. Reduce heat to medium, cover and cook 5 more minutes. With a spatula or fork, carefully draw cooked portions at edge toward center, tipping pan to let uncooked portions flow to bottom. Cover and cook an additional 5 minutes. Serve warm.
