Recipe: Turkey Gumbo

Turkey Gumbo

1 pound smoked sausages, cut in 1/2 inch slices
1/4 cup vegetable oil
1/4 cup flour
3 stalks celery, chopped fine
2 onions, chopped
2 cups cubed cooked turkey (I use cooked ground turkey)
3 cups water
1/2 tsp salt
1/2 tsp pepper
Hot cooked rice

Brown sausage in large skillet; drain and set aside. Combine oil and flour in Dutch oven; cook over medium heat, stirring constantly (this is the roux) stir until it is the color of a copper penny, about 10 minutes. Add celery and onion; cook until tender, stirring frequently. Add sausage, turkey and water. Bring to boil; reduce heat and simmer, uncovered, 2 hours, stirring occasionally (at this point I usually put in a crock pot instead of simmering on the stove--cook on Low for 6-8 hours or High for 4-5 hours). Before serving, stir in salt and pepper and serve over rice.
