This sounds wonderful, too :-) I can imagine that it is even better when cooked outdoors :-)!! I do have to agree with you and Roxann that homemade mashed potatoes elevate this from very "run of the mill" to wonderful. Personally, I would never dream of using instant but mahsed potatoes seem to be hard for some. I think that when Karen/England posted her recipe that she warned that the mashed potatoes needed to be quite stiff or they would sink right into the meat mixture. The recipe from the Irish Rovers sounds like it has gravy but it is such a small amount that you don't really notice it in the finished dish. In fact, I was worried (not having ever made it before) if there was enough but, I think that it is supposed to not be swimming in gravy. Anyway, thanks again for the wonderful recipe, June:-)
