Recipe(tried): Rinderwurst (German Sausage) recipe -- finally, the real thing!

Well, "the real thing" is the second recipe posted below. It's the one that's titled "Rinderwurst (German Sausage)."

A beloved friend and re-discovered relative sent me some that she buys from Walt's Foods in Beecher, IL. (Walt's has other locations, too.) She has shared Walt's rinderwurst with some of our elderly relatives, and they say it tastes just the way they remember it. (Our relatives settled in Illinois, and in northeast Iowa, in and around Tripoli.)

She shipped some to me, too, which arrived today. It is nearly indistinguishable from that second recipe in my post. In fact, when I asked Walt's for their recipe, the one they shared with me was that second recipe! So someone must have shared Walt's recipe online long ago.
