ISO: Rinderwurst or Rinder Ring - questions

Wisco born, McHenry (raised by grandparents born in the 30's) & Barrington (family origins and grew up) raised, Moved to Fox Point, WI- the rinderwurst seems very well known in Northern IL, NOT in Wisconsin. Strange as its quite German here. There was a butcher by the old bridal shop (alamour) on NW HWY/RT 14 that had it and now a butcher in Crystal lake, IL is where my grandmother sources it. The flavor is the same as what I grew up with in Barrington. But here's in WI from Lake Geneva to Milwaukee and Sheboygan have not heard of it. Has anyone who knows of the flavor (who has tried) rinderwurst from either Barrington or what the butcher calls rinder ring in Crystal lake have a similar recipe? Curious if the recipes posted are a light grey in a casing of sorts and if the flavor of the oatmeal is preferred or the recipe using stew or other meat. Ground beef doesn't seem accurate?
