ARKANSAS RICE CASSEROLE
1 (10-1/2 ounce) can beef consomme, undiluted
1 cup uncooked long-grain rice
1 cup water
1 onion, diced
1 green pepper, cut into julienne strips
1/4 cup butter or margarine, melted
1 (4-ounce) can sliced mushrooms, drained
1 (2-ounce) jar diced pimiento, drained
1 teaspoon salt
Combine all ingredients in a large bowl; mix well. Pour mixture into a lightly greased 12 x 8 x 2 inch baking dish. Cover with aluminum foil.
Bake at 375 degrees F for 1 hour or until rice is tender. Fifteen minutes before the hour, uncover the rice casserole so that it will be compact, not soupy.
