Recipe: Carrot Meat Loaf

Main Dishes - Beef and Other Meats
CARROT MEAT LOAF

2 C. diced cooked carrots
1 lb. ground beef
1 egg, well beaten
3/4 C. soft bread crumbs
1 small onion, minced
2 tsp. salt
1/4 tsp. pepper

Mix all ingredients thoroughly. Place in well-greased loaf pan. Bake at 375 F for 1 hour. Yields 8 servings.
