Cheesecake Bars
Recipe by : General Electric Food Processor Cookbook
Makes 16 (2-inch) squares

1 1/2 cups graham cracker crumbs
1/4 cup sugar
6 ounces butterscotch chips
5 tablespoons butter
2 eggs
2 tablespoons flour
1 tablespoon flour
8 ounces cream cheese

Preheat oven to 350 degrees F. Process graham crackers into fine crumbs, if needed. In 1-quart saucepan, combine butterscotch chips and butter. Melt over low heat. Remove from heat. Stir in crumbs. Set aside 1/2-cup mixture. Press remaining mixture into ungreased 8-inch square baking pan. Bake 10 minutes. Position knife blade into food processor bowl. Add remaining ingredients. Process until smooth, about 10 seconds. Spread over hot, baked crust. Sprinkle reserved crumb mixture over top. Return to oven and bake 20 to 25 minutes. Cool and cut into squares. Store in refrigerator.
