Chocolate Oatmeal Cookies (No Bake)
1/2 cup unsalted butter
1 3/4 cups granulated sugar
1/4 cup cocoa
1/2 cup milk
pinch of salt
1/2 cup peanut butter
1 teaspoon vanilla extract
2 2/3 cups uncooked quick oats
Cut butter into a few pieces and begin to melt in a large pot. Add sugar, cocoa, milk, and salt and cook over medium high heat, stirring continuously until mixture boils.
Reduce heat to medium and boil and stir for 2 minutes.
Remove from heat. Stir in peanut butter and vanilla until well mixed. Sit in oats.
Drop by spoonfuls on waxed paper, allow to set at room temperature until firm, about 30 minutes.
