Cream Puffs
1/2 cup water
1/4 cup butter or margarine
1/2 cup self-rising flour
2 eggs, slightly beaten
Cream Filling (recipe below) or sweetened whipped cream
powdered sugar
Preheat oven to 400 degrees F.
Bring water and butter to a full boil. Stir in flour and continue stirring until mixture forms a ball, about 1 minute.
Remove from heat and beat in eggs until smooth.
Drop dough in large spoonfuls onto an ungreased cookie sheet.
Bake at 400 degrees F. until golden brown, 35 to 40 minutes. Cool.
Cut off tops and pull out the soft dough inside.
Fill with cream filling or whipped cream.
Replace tops and dust with powdered sugar.
Cream Filling
1/3 cup granulated sugar
2 tablespoons cornstarch
dash of salt
2 cups milk
2 egg yolks, beaten
2 tablespoons butter or margarine, softened
1 teaspoon vanilla
Mix together sugar, cornstarch, and salt in a sauce pan. Slowly stir in milk.
Bring to a boil over medium heat. Boil and stir one minute.
Pour half of the hot mixture into the egg yolks. Mix and return to saucepan.
Boil and stir for another minute.
Remove from heat. Stir in butter and vanilla until smooth. Refrigerate.
