Orange Almond Streusel Coffee Cake
Streusel (recipe follows)
2 cups all purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
dash salt
1/4 cup solid shortening
1/4 cup butter or margarine
1/2 cup granulated sugar
3 eggs
1 teaspoon vanilla
2/3 cup orange juice
Glaze (recipe follows)
Preheat oven to 350 degrees F.
Grease and lightly flour and 9 inch tube or Bundt pan.
Prepare streusel, set aside.
Sift together flour, baking powder, baking soda, salt, and cinnamon, set aside.
Cream butter, shortening, and sugar together. Beat in eggs, one at a time, until well blended. Beat in vanilla.
Mix flour mixture into the cream mixture alternately with the orange juice, beginning and ending with the flour mixture.
Beat until smooth.
Pour half of the batter into prepared pan. Spoon streusel even around the center of the batter. Top with remaining batter.
Bake at 350 degrees F. until a toothpick inserted in the center comes out clean, 30 to 35 minutes.
Cool completely before turning out of the pan.
Place on serving plate and drizzle with glaze.
Almond Streusel
1 cup packed light brown sugar
1/4 cup flour
1 cup sliced almonds
3 tablespoons butter or margarine, melted
Stir together brown sugar, flour, and almonds. Stir in butter just until ingredients are moistened, don't overmix.
Glaze
1/2 cup powdered sugar
2 to 3 tablespoons orange juice
Stir together until smooth. Use immediately.
