Carrot slaw
This is an every-day salad to go with fried or baked fish, fish patties, cods tongues, fish gratin or a fish souffle. It is nothing fancy to it, but kids often like it better than cooked veggies, and it is pretty and healthy.
Carrot slaw
5 big carrots, finely shredded
5 Tbls lemon juice
1 cup of 7-up (or something similar)
1 cup of water
Mix water, soft drink and lemon juice. Taste, maybe you want it a little tarter. There should be much dressing. Shred the carrots, add to dressing. Let it soak for at least half an hour.
(If you want to use low calorie soft drink, fine. Or if you just want to use a lemonade, cool aide or something similar that is fine. The dressing should be a little weaker and a little tarter than you would like to drink)
Variations:
Add 1/2 cup of prunes cut in slivers
or: 2 red apples in very thin slices
or: 1/2 cup of shredded snow peas
or even 1 cup of raw shredded rutabaga
