Recipe: Rumbledythumps

Rumbledythumps

1 small onion, diced
2 cups cooked mashed potatoes
1 cup cooked cabbage, chopped
1/2 cup milk (low fat is ok)
6 oz shredded cheddar cheese
salt and pepper to taste

Saute onion in oil or butter in a pot large enough to mix everything (save washing dishes). Stir in remaining ingredients, bake in a lightly greased casserole, uncovered, at 350 F until hot throughout, about 20 minutes.
