Citrus Mustard

1/2 cup light mustard seed
2 tsp. coriander seed
2 tbsp. lightly packed dry mustard
1/2 cup water
3/4 cup raspberry vinegar
3 tbsp. honey
2 tbsp. sugar
2 tsp. finely chopped lemon or lime zest (fresh)
2 tbsp. orange juice

Grind the mustard seed and the coriander seed to the consistency of fine meal in a spice grinder or blender. Blend in the dry mustard. Combine with water in a bowl and stir smooth. Allow to stand for one hour (or three or four if desired) at room temperature. Scrape the mixture into the bowl of a blender and add remaining ingredients. Blend smooth. Add a bit of lemon juice if the blend seems to thick with the above. Put into sterilized jar with a tight flitting lid and let rest for 2 days for flavors to marry. Can be stored in a cool place or in the refrigerator.
