I made this recipe for company over the Fourth of July.
Everyone loved it. Here is the recipe:
2/3 cup fresh lime juice (include the pulp)
1/3 cup fresh orange juice (include the pulp)
1/3 cup canola oil
1/3 cup honey (generous measure)
1 tablespoon chopped fresh cilantro
1 pound uncooked shrimp in the shell or 1 pound of
skinless, boneless chicken breast.
(red pepper flakes or minced fresh serrano chili can be added to the marinade if you like things with a little "heat")
Mix together in a small glass bowl the lime juice, orange juice, oil, and honey until honey is blended into the juices. Stir in chopped cilantro. Put half of marinade into a ziplock plastic bowl. Add prepared shrimp (see note following recipe) or chicken breast. Place in refrigerator and marinate for 1 to 2 hours. Remove from marinade and grill on hot grill until done. Brush marinade over shrimp or chicken breast several times as it is cooking on the grill.
Put reserved marinade into a small sauce pan and bring to a boil. Simmer for 5 to 10 minutes. Serve as a dipping sauce.
To prepare shrimp: Cut through shell across top of each shrimp and remove dark vein. Rinse with cold water; drain. Do not remove the shells. Soak wooden skewers in water for 1 hour. Thread 6 shrimp onto each wooden skewer.
