HERB JELLY
"I found a recipe in an herbal book of mine for "herb jelly". It uses apples as a base and flavors with the herbs you add. For earl grey jelly just add bergamot (the flower that gives earl grey its distinctive flavor) to the base recipe."
4 lb tart cooking apples roughly chopped
5 cups water
1 cup sugar per cup of juice
a good handful of fresh herbs (I would guess 1/2 cup)
Boil the cooking apples with the water in a large pan. Add the fresh herbs and simmer. Cook until the apples are soft. Strain through a jelly bag overnight.
Measure the juice, return to the saucepan and add the sugar. Stir to dissolve the sugar, then boil until setting point is reached, taking care not to let it boil over. Allow to cool for 10 minutes.
Pour into clean, sterilized jars. Seal and process 10 minutes in a boiling water bath, label and date. Store in a cool, dark cupboard.
