Coconut Cookies - 1927

1/4 cup Crisco
1/2 cup sugar
1 egg -- beaten
1/2 cup milk
1/2 teaspoon lemon juice -- or extract
1 1/2 cups pastry flour
2 teaspoons baking powder
1 teaspoon salt
2 cups coconut

Cream shortening & sugar. Add egg then the lemon juice. Stir in coconut, then milk. Last add flour, salt & baking powder sifted together. Drop allowing space to spread. Bake 15-20 minutes

Bake at 350. All measurements level. About 2" space should be allowed on each pan for cookies to spread. Let cookies stand in pan a minute before removing to board to cool. Do not pile or put in jars until quite cold.
