COLD BEETS IN HERBED MUSTARD SAUCE
You're either a beet lover or you're not. Here's a delicious dish for those who are. Great to do-ahead.
4 cups cooked beets, cut into 1/2in. matchsticks and chilled
2 tbsp fresh lemon juice
1 tbsp white cider vinegar
2 tsp sugar
1/3 cup olive oil
1/4 cup Dijon mustard
3 tbsp dill, finely chopped
1 tbsp parsley, finely chopped
Salt and pepper to taste
2 hard boiled egg yolks, finely chopped
Place cold beets in a large bowl.
In a small bowl combine next three ingredients and stir until sugar is dissolved.
Add olive oil and mustard; whisk until creamy. Add dill and parsley; mix well. Pour over beets; salt and pepper to taste.
Cover and refrigerate at least 4 hours.
When ready to serve; garnish with egg yolks and sprigs of parsley.
