DUCHESS POTATOES

10 medium baking potatoes -- peeled and cut into eighths
1/4 cup butter or margarine
1/4 cup milk
3/4 teaspoon salt
1/4 teaspoon ground black pepper
2 large eggs -- lightly beaten
2 tablespoons butter or margarine -- melted
Paprika

Cook potatoes in boiling water to cover for 15 minutes or until tender; drain and mash. Stir in butter and next 3 ingredients. Let cool 10 minutes. Stir in eggs. Spoon mixture into a large decorating bag fitted with a large star tip. Pipe 14 (2-inch) rosettes onto a lightly greased baking sheet. Drizzle with melted butter, and sprinkle with paprika. Bake at 350 degrees F. for 15 minutes or until lightly browned around the edges.
