Recipe: Vidalia Onion Rings

Side Dishes - Vegetables
VIDALIA ONION RINGS

2 large Vidalia onions, peeled and sliced into 1/2-inch slices and separated into rings (we sliced them thinner)
2 cups buttermilk
1 1/2 cups flour
1/2 cup white cornmeal
Ground cayenne pepper
Salt and pepper

Pour buttermilk into a bowl and set aside.

Mix together flour and cornmeal and season to taste with cayenne, salt and pepper.

Heat 3-inches vegetable oil in a skillet to medium-high heat.

Dip a few onions into the buttermilk. Shake off the excess and then dredge in flour mixture. Repeat dipping in buttermilk and then flour mixture.

Place rings in hot oil and cook about three minutes until golden brown (don't overcrowd). Drain on paper towels and sprinkle with salt.
