5 tablespoons butter
2 cups boiling water
1 small box corn muffin mix
2 eggs, slightly beaten
1 teaspoon salt
1 cup cold milk
Melt butter in 2-quart baking dish in oven. Place corn muffin mix and salt in mixing bowl. Add boiling water and stir until well blended. Cool slightly before adding some of the beaten eggs, beating and ading more, and beating until all is blended in. Add melted butter and milk. Pour batter into dish in which the butter was melted. Bake at 375 degrees F. twenty minutes, increase heat to 425 degrees F. and bake for an additional 10 minutes. Serve immediately with plenty of butter.
