Roasted Potato Wedges

3 md Unpeeled Baking Potatoes (About 1 3/4 Lb.)
1Tbsp + 1 tsp Olive Oil
1/2 tsp Salt
1/4 tsp Pepper
1/2 tsp Dried Rosemary
Scrub Potatoes; Cut Each Lengthwise Into 6 Wedges. Place in Bowl. Cover With Cold Water. Let Stand 30 Min. Drain. Pat Wedges Dry With Paper Towels. Toss Wedges With Olive Oil. Place Skin Side Down On A Baking Sheet Coated With Cooking Spray. Combine Salt, Dried Rosemary & Pepper. Sprinkle Mixture Evenly Over Wedges. Bake At 400 For About 1 Hour OR Until Wedges Are Tender & Browned.Potato Wedges

4 potatoes (3 1/2 ounces each) a combination of brown and sweet potatoes is delicious
2 egg whites, unbeaten
Salt-free seasoning to taste
Preheat oven to 425 degrees. Cut potatoes into wedges, for french fries - cut into thin slices. Dip wedges into unbeaten egg whites and place on a non-stick pan sprayed with vegetable spray. Season with salt-free seasoning and bake 25 minutes for wedges, 20 minutes for french fries, or until golden brown.Grilled Potato Wedges

4 large Russet baking potatoes
1/4 cup olive oil
Coarse salt
Freshly ground pepper
1 tbsp. chopped fresh rosemary
Malt vinegar
Light a pile of charcoal on one side of the grill or fire up one burner on a gas grill. Cut the potatoes lengthwise into quarters. Pour the olive oil on a plate and roll the potato pieces in the oil until they are thoroug hly covered. Sprinkle the potatoes with salt, pepper, and chopped fresh rosemary. When the charcoal is covered with light gray ash, put the potatoes on the grill away from the heat. Cover the grill and cook the potatoes until tender, turning them every 10 min. Depending on the thickness of the wedges, the potatoes should be done in 20 to 40 min. When the tip of a sharp knife easily pushes all the way through the potatoes, they're ready. Sprinkle liberally with malt vinegar. Serve hot off the grill. Spicy Sweet Potato Wedges
Serves: 4
3 large (2 pounds total) scrubbed sweet potatoes into 1/2"-wide wedges
1 tablespoon vegetable oil
1 teaspoon sugar
1 teaspoon chili powder
3/4 teaspoon salt
2 tablespoons maple syrup
1 teaspoon cider vinegar.
Heat oven to 475 degrees F. Cut sweet potatoes into 1/2"-wide wedges. Toss with vegetable oil, 1 teaspoon sugar, chili powder, and salt. Spread on lightly greased baking sheet. Roast 15 to 20 minutes, shaking once during cooking. Drizzle with maple syrup mixed with cider vinegar.Golden Parmesan Potatoes
6 lrg. potatoes
1/4 cup. flour
1/4 cup parmesan cheese
salt & pepper
1/3 cup margarine
Cut peeled potatoes into quarters. Combine flour, cheese & seasonings in a plastic bag. Moisten potatoes with water and shake a few at a time in the bag to coat. Melt margarine in 9 x 13 pan and place potatoes in single layer. Bake at 375 for 1 hour, turning once.Mo-Jo Potatoes

1/2 cup grated Parmesan cheese
3/4 tsp. salt
3/4 tsp. garlic powder
3/4 tsp. paprika
3 Tbsp. melted butter or margarine.
Wash potatoes and cut each into 8 wedges; set aside. Combine cheese & next 3 ingredients, stirring well. Dip potato wedges in melted butter; arrange in single layer in slightly greased 15x10x1" pan. Sprinkle cheese mixture over potatoes. Bake at 3750 uncovered, 40 min. or till potatoes are tender & browned. Lipton Onion Roasted Potatoes
2 lbs. (8-10 med.) potatoes, peeled or washed and unpeeled, but into large chunks or wedges
1/3 cup olive or veg. oil
1 envelope Lipton Onion Soup Mix
chopped parsley as garnish.
Preheat oven to 450. Place all ingredients in large plastic bag & shake till evenly coated. Empty into jelly roll pan or any shallow baking/roasting pan. Bake 40 minutes, stirring occasionally, or till potatoes are tender & golden brown. Garnish with chopped parsley if desired.
