Freezing Leftover Mashed Potatoes

I have started making extra mashed potatoes on purpose when I found they freeze really well. I put them in a muffin tin (sprayed with veg. spray) then, when they're frozen, pop them into a ziplock baggie and keep 'em in the freezer. Then they nuke quickly; sometimes I add a little more butter, veg broth or yogurt as they heat. It sure is nice to have homemade mashed potatoes those nights we're really rushed!
