FRUITCAKE MINIATURES
1 cup prepared mincemeat
1 cup candied cherries
1 cup candied pineapple, cut in small pieces
1 cup walnuts, chopped
3/4 cup flour
1/4 cup sugar
1/2 teaspoon baking powder
1/4 teaspoon salt
3 eggs
1/2 cup Grandma's Unsulphured Molasses
1 teaspoon vanilla
Preheat oven to 300 degrees F. Paper-or foil-lined 16 individual muffin cups.
In large bowl, mix together mincemeat, cherries, pineapple and walnuts. Set aside.
Mix together flour, sugar, baking powder and salt; add to fruit mixture and mix well. Set aside.
Beat eggs; beat in molasses and vanilla. Add to fruit and dry ingredients; stir until dry ingredients are completely moistened. Spoon into prepared muffin cups.
Bake in a preheated 300 degree F oven for 60 minutes. Turn out onto wire rack and cool completely.
Best if "aged" a few days before serving.
Makes 16 (2-inch) fruitcakes.
