I too am in search of the TN T cakes, and started thinking that they may be similar to a wonderful recipe I have for Pecan Pie Muffins. It's extremely simple, just 5 ingredients, and it reminds me of pecan pie. I'm betting you could add melted chocolate and bake in the smaller muffin pans. If interested, here's the recipe for reg. muffins.
PECAN PIE MUFFINS
1 cup packed light brown sugar
1/2 cup all purpose flour
1 cup chopped pecans
2/3 cup butter, softened
2 eggs beaten
Preheat oven to 350 degrees F. Grease and flour muffin tins or line with liners.
In a medium bowl stir together brown sugar, flour and pecans.
In a separate bowl beat the butter and eggs together until smooth, stir into the dry ingredients just until combined. Spoon the batter into the prepared muffin cups. Cups should be about 2/3 full.
Bake at 350 for 20 to 25 minutes and cool on wire rack.
I'm thinking if adding chocolate and baking in small muffin tins that would probably want to bake lesser amount of time.
