Garlic and Herbs Stir-Fry
Servings 4-6
1/4 cup vegetable oil
4 cloves whole peeled garlic, crushed
3 small slices fresh ginger
fresh vegetables cut into bit-size pieces, such as: zucchini, broccoli, onions, bell peppers, carrots
1/2 cup white wine
1 teaspoon salt
1/2 teaspoon black pepper
chopped fresh oregano
chopped fresh parsley
juice of 1/2 lemon
Heat oil in large skillet over medium-high heat. Add garlic and ginger; cook and stir until ginger is golden brown. Discard ginger. Add vegetables; stir to coat. Add wine; cook and stir 3 minutes. Add salt, pepper, oregano, parsley and lemon juice to taste. Cook 1 minute more.
