GRAVY-BAKED PORK CHOPS4 lean pork chops, 1/2 inch thick
1/4 teaspoon salt
ground black pepper
1 tablespoon hot shortening
1 (10 3/4 oz.) can condensed cream of mushroom soup
2/3 cup evaporated milk
1/3 cup water
Preheat oven to 350 degrees F (moderate).
Sprinkle pork chops with salt and pepper. Heat shortening in a 10-inch oven-proof skillet and brown chops over medium heat. Drain off drippings.
Mix together condensed soup, evaporated milk and 1/3 cup water. Pour over chops in pan.
Bake 45 minutes, or until chops are tender. Stir gravy well.
VARIATION:
Instead of baking, cover and cook chops and gravy about 45 minutes over low heat, stirring now and then, or until chops are tender.
Makes 4 servings
