Halibut Prosciutto with Fresh Herb Butter
1/4 cup (1/2 stick) butter, softened
2 teaspoons chopped fresh rosemary
1 1/2 teaspoons chopped fresh thyme
1 tablespoon grated lime zest
salt and freshly ground pepper to taste
4 (1/2-inch) halibut fillets
2 teaspoons fresh lime juice
4 very thin slices prosciutto
4 green onion blades, blanched
1 tablespoon grated Parmesan cheese
4 sprigs fresh rosemary
Combine the butter, chopped rosemary, thyme, lime zest, salt and pepper in a small bowl and mix well.
Arrange the sea bass on a foil-lined baking sheet. Sprinkle with the lime juice. Spread with the butter mixture. Wrap each fillet with a slice of prosciutto, securing with wooden picks.
Roast at 450 degrees for 15 minutes or until fish flakes easily with a fork.
Remove to a serving platter. Tie a green onion around each fillet. Sprinkle with Parmesan. Garnish with rosemary sprig.
You may prepare the Herb Butter in advance and chill until ready to use. Let soften at room temperature before using.
