4 chicken breast, no skin, no bone,
3 eggs
1/2 lb grated parmesan cheese -- 250gr
butter for frying
In a small bowl, beat up the egg. Pour the parm cheese out on a plate. Start heating a non-stick pan with about 1 or 2 tablespoons of butter in it. Cut your chicken breasts into 2 inch 50mm squarish pieces. Dip the chicken pieces, one by one, in the beaten egg, then press them into the parm cheese, so that it sticks on both sides of the chicken. Drop the chicken into the heated butter - don't let the chicken pieces touch each other. When you have all of the pieces in the pan, fry them until they're crispy-brown and flip them over. Put a lid on the pan and cook on medium-high heat until the other side is browned. Drain on brown paper bag or paper towels. These are even good for a packed lunch or in a salad. Just reheat in the microwave for about 1 - 1&1/2 minutes.
