Creamy Herby Sauteed Cabbage
alt.support.diet.low-carb/Marcy Thompson (1998)
Total: 5.1g carbs
1 cup raw nappa cabbage, sliced very very thin; 3.1g
2 Tbsp minced scallion tops; 0.8g
1 Tbsp butter
salt and pepper to taste
2 Tbsp garlic-and-herb Boursin; 1.2gThis is only one serving, but the recipe can easily be doubled or quadrupled.
Melt the butter over low heat. Add the cabbage and the scallions. Stir around to coat with butter. Cover and leave for 15 minutes, stirring occasionally if you get nervous. After 15 minutes, the cabbage should be soft and translucent and there should be some liquid in the pan. Turn the heat up and take the cover off. Heat, stirring constantly until the juices come to a rolling boil. Add the cheese and stir vigorously until the cheese melts into the juices. Remove from heat immediately and season with salt and pepper.
