The way I do it:
I stir it until it comes to a boil, then I turn it a little below medium and stir it as little as possible until it reaches the soft ball stage (about 15 minutes).
Then I add nuts (or crunchy Peanut Butter in place of butter) and set pan in cold water trying not to get water in the pan and spoiling the fudge.
