If you have some au jus gravy left, get some French rolls and make lamb dip sandwiches: just slices of lamb layered in the roll, whole thing dipped in the juice. Maybe a little hot German mustard. A famous old-timey eatery in L.A. called Phillipe's (usually pronounced Felipe's) built a thriving business around these "French dipped" sandwiches.
