Recipe: Pico De Gallo (using plum tomatoes)

PICO DE GALLO

3 plum tomatoes, coarsely chopped
1/2 red onion; finely chopped
1/2 cup black olives, chopped (optional)
1 shredded carrot (optional)
4 green onions, chopped
1/4 cup fresh lime juice
1/4 cup grated lime peel
2 jalapeno peppers, seeded and chopped
6 garlic cloves, peeled and chopped
2 tbsp chopped fresh cilantro
1 tbsp chopped fresh parsley
salt and freshly ground black pepper

In a large bowl, mix together all ingredients.

Let sit 2 hours before serving to allow the flavors to marry.

Makes 2 cups
