Recipe(tried): Pork Tenderloin (easy but excellent)

Main Dishes - Pork, Ham

Honey Spice Pork...

4 lb. pork loin roast
1 1/2 tbsp. pickling spice
3 tbsp. brown sugar
1/4 cup honey
1/4 tsp. powdered cloves

Place meat in heavy pot or Dutch Oven and add water to cover meat halfway.
Add 1 tbsp. of the pickling spice and brown sugar to the water.
Sprinkle remaining pickling spice on top of meat.
Cover, bring to boil and simmer 45 min.
Remove meat from liquid and place in open roaster with 1/4 cup of the liquid.
Combine the honey and cloves and brush over meat.
Bake at 300 degrees for about 2 hrs. basting occasionally with liqid from pan.
If liquid starts to burn, add small amount of boiling liquid.
Liquid makes a lovely sweetish gravy.
Slice thinly for serving. This is one of my very favourites to serve for company (Or Ourselves)
