Potatoes with Onions and Bacon
for 6 persons (French recipe)
3 1/3 lb potatoes
1/4 lb smoked bacon
3 large onions
1/4 lb butter
salt
cast-iron casserole dish
Line the bottom of the casserole with thin rashers of bacon. Cover with a layer of sliced potatoes and then a layer of sliced onions. Season. Continue alternating layers of potatoes and onions and knobs of butter. Finish with a layer of potatoes dotted with butter. Cover the casserole and cook for 1 hour in a very hot oven. Before serving mix thoroughly all the ingredients.
