PEACH PUDDING
Don't remember where I got the recipe but I've had it for a ver......y long time. A real comfort food!
1/2 cup flour
3 teaspoons baking powder
1/2 teaspoon salt
1/2 cup milk
1 egg, beaten
1/3 cup shortening
3 cups sliced peaches
1/4 cup sugar
1 tablespoon lemon juice
1 teaspoon almond extract
Sift dry ingredients tog. Add rest of ingredients except the peaches & mix until it is like biscuit dough. Place on top of peaches in an 8x8 greased pan & spread evenly around. Sprinkle with 2 tbs. sugar. Bake at 350 for 40 minutes. Good warm or cold. Yummy served warm with vanilla ice cream.
