Potatoes and Sausage (Papas y Chorizo)
3 large baking potatoes, peeled
3 to 4 Tbsp oil for frying
1/2 lb chorizo
pinch oregano or chopped cilantro
Dice potatoes and rinse thoroughly. In a skillet, heat safflower oil, peanut oil or salad oil. When oil is hot, add potatoes, cover and cook over medium heat. Stir occasionally.
In a fry pan, cook chorizo. Chorizo should always be well-cooked. Chorizo takes on a dark reddish color when cooked. Mash chorizo and stir frequently during cooking. When chorizo is cooked, drain.
Season potatoes with salt and pepper as desired. When potatoes are tender, add drained chorizo and blend in well. Add a pinch of oregano or cilantro, chopped and cover to simmer 10 minutes. Serve hot.
