PUMPKIN COOKIES
I got this from a friend at church who used to make them for her Mother's Snack Bar. She said that they were very popular and I can see why!
2 cups flour
1 cup rolled oats
1 teaspoon cinnamon
1/2 teaspoon salt
1 cup margarine
1 cup brown sugar
1 egg, slightly beaten
1 teaspoon vanilla
1 cup pumpkin puree
Combine & mix first 4 ingredients in a bowl. Combine & mix the rest in another bowl. Mix the 2 together. You may wish to add more flour depending on the pumpkin puree.
Add 1 cup of raisins or dates. Drop by the spoonful on a greased cookie sheet and bake at 350 for about 16 minutes or until done.
