This is one of those "must bring" Thanksgiving recipes in our family. This year my niece called it, "hot candy".
SWEET TATER CRUNCH
3 cups drained, mashed canned sweet taters
1 cup granulated sugar
1/2 cup butter, softened
2 beaten eggs
3/4 cup evaporated skim milk
1 Tablespoon cream sherry
1 teaspoon vanilla
1 cup packed brown sugar
1/2 cup butter, softened
1/3 cup self-rising flour
1 cup chopped pecans (or nuts of your choice)
Beat together taters, sugar, 1/2 cup butter, eggs, milk, sherry and vanilla. Spoon into a shallow casserole dish that has been sprayed with non-stick baking spray. Combine brown sugar, 1/2 cup butter & flour thoroughly. Stir in pecans. Crumble over taters. Bake at 350 until hot and bubbly, about 30-34 minutes.
Note: Thanksgiving 2003 - This year I picked up Dark Brown Sugar, Trader Joe's brand. While it's very good, I found it had too much of the molasses flavor for this recipe. I will go back to using regular dark brown or light brown next year.
