CARBONARA SAUCE FOR PASTA
I got this recipe from an old Milk Calendar and it is really delicious!
8 ounces bacon, diced
1 medium onion, finely chopped
2-3 cloves garlic, minced (to your taste)
hot red chili flakes to taste (pinch)
3 tablespoons flour
2 cups milk
1/2 cup cream
2 eggs, slightly beaten
1 cup grated parmesan cheese
2 tablespoons fresh parsley, chopped fine
1 teaspoon salt
1/2 teaspoon fresh ground black pepper
Place bacon pieces in deep skillet. Cook until crisp. Drain on paper towels & reserve. Discard all but 3 Tbs. fat from pan and return to heat. Add onions, garlic & chili flakes & cook 2 to 3 minutes until tender. Stir in flour. Cook 2 to 3 minutes longer. Whisk in milk & cream & bring to the boil. Reduce heat. Simmer 5 minutes. Whisk eggs into sauce with cheese and parsley & cook 2 minutes. Add salt & pepper. Toss with 3/4 lb. (375 g) of cooked spaghetti, penne, shells or other pasta. Sprinkle with additional black pepper & reserved bacon. Yields 4 cups.
