Pacific Salmon Loaf
1 can (16-oz) Salmon, drained and Flaked
1/2 cup Dry bread crumbs
1/2 cup Mayonnaise
1/2 cup Chopped onion
1/4 cup Chopped celery
1/4 cup Chopped green pepper
1 Egg, beaten
1 tsp Salt
Cucumber sauce
Combine ingredients except Cucumber sauce (below); mix lightly. Shape into loaf in shallow baking dish. Bake at 350 degrees for 40 minutes. Serve with Cucumber Sauce.
CREAMY CUCUMBER SAUCE
Yield: 1 cup

1/2 cup Coarsely grated peeled Cucumber
1 tsp Fresh grated lemon peel
2 tsp Fresh squeezed lemon juice
1/4 tsp Dried dill weed
Salt and pepper
In a small bowl, combine mayonnaise or sald dressing, cucmber, lemon peel, lemon juice and dill weed. Seson to taste with salt and pepper. Serve over broiled, poached or fried fish.
