Serves 8
2 tablespoons unsalted butter
3 cups carrots, chopped
1 medium onion, chopped
1 medium potato, peeled and sliced
4 cups chicken broth
1 teaspoon salt
pinch white pepper
pinch sugar
fresh parsley
Heat butter in large, heavy saucepan over med. heat & saute carrots & onion for five minutes. Add potato slices & cook another 3 minutes, Add chicken broth, salt, pepper & sugar and simmer, covered, until vegetables are tender. Cool slightly & puree in processor. Add more chicken broth, if necessary, to obtain desired consistency. Adjust seasoning if desired. Heat again & serve. Garnish with fresh parsley.
