PORK WITH COUSCOUS

Serves 4
4 teaspoons olive oil
12 ounces lean pork (or chicken breast), cut in thin strips
2 cloves garlic, minced
2 teaspoons ginger root, minced
1 or 1 1/2 teaspoons cumin
1 red pepper, diced
2 small carrots, peeled & sliced on the diagonal
2 cups broccoli flowerets
3 green onions, chopped
1/4 cup raisins
1 1/4 cups chicken or veg. stock
1/4 teaspoon salt
1/4 teaspoon pepper
1 cup couscous
Using a large non-stick fry pan, heat half of the oil over med.- high heat. Add meat & cook, stirring, until no longer pink. Set aside. Add remaining oil to pan, reduce heat to medium. Add garlic, ginger & cumin. Cook, stirring for 1 minute. Stir in red pepper, carrots, broccoli & 1/4 cup water. Cover & steam 2-3 minutes or until almost tender. Return meat & any juices to the pan along with green onions, raisins, stock, salt & pepper. Bring to a boil. Stir in couscous, cover & remove from heat. Let stand for 7 minutes. Uncover & fluff with fork.
Can be made with any vegetables you have on hand instead of those listed.
