Hi Angela! Here are a couple of my favorite
green bean recipes:
Savory Green Beans
1-1/2 lbs. green beans (may use frozen)
1/4 c oil or butter (I use less!)
1 clove garlic, crushed
1 Tbs. chopped onion
3/4 c diced green pepper (can omit if you
are not fond of peppers)
1/4 c boiling water
1 tsp. salt
1 tsp. dried basil
1/2 c grated parmesan cheese
Leave the beans whole or cut into 1 inch
pieces. Heat oil and garlic in heavy pan.
Add onion and gr. pepper; cook slowly for
3 minutes. Add beans, water, salt and basil.
Cover and simmer about 15 minutes. until
beans are tender. Stir in half of the cheese.
Turn into serving dish and sprinkle with
the remaining cheese. Makes 6 to 8 servings
(You can easily cut this in half)
Green Beans with fresh Tomatoes
1/4 c chopped green pepper
1 med. size onion, chopped (1/2 cup)
2 Tbs. butter or marg.
1 large tomato, chopped
1/4 tsp. oregano
1/2 tsp. salt
1/2 a pound green beans, cooked and drained
Melt butter in saucepan, add onion and gr.
pepper. Simmer till veggies are soft. Add
tomato, oregano, and salt, and simmer for
10 more minutes. Add beans to the sauce and
cook just long enough to heat through.
