Recipe: Savory Pot Roast Meal (using dried fruit and sweet potatoes, 1960's)

SAVORY POT ROAST MEAL



2 to 3 pound beef pot roast
1 3/4 cup dried apricots
2 tablespoons shortening
3/4 cup dried prunes
2 medium onions
4 whole cloves
1 teaspoon salt
6 sweet potatoes
1 cup cider
1 cup water

Brown meat in hot shortening on medium heat. Slice onions and add
to pot roast with salt and cider. Cover and simmer 2 hours or until meat is tender. Thirty minutes before meat is ready to serve, add fruits, cloves, sweet potatoes, and water. Remove meat, vegetables, and fruit from broth, and thicken for gravy if desired.

Makes 6 servings
