Recipe: Scampi-Pasta Salad

SCAMPI-PASTA SALAD

1/2 pound tricolor pasta
1 pound large shrimp, peeled and deveined
1 medium red bell pepper, cored and sliced
1 1/2 tablespoons chopped fresh basil
1/2 cup olive oil
1/4 cup white wine vinegar
2 tablespoons lemon juice
1/4 teaspoon salt
1/4 teaspoon cayenne
2 cloves garlic, minced
2 tablespoons grated Parmesan cheese (for serving)

Cook pasta according to package directions.

Rinse shrimp well and add to pasta during last two minutes of cooking. Drain well.

In a large bowl, combine pasta and shrimp with red bell pepper; set aside.

Chop garlic with basil.

In a small jar combine oil, vinegar, lemon juice, salt, cayenne, basil and garlic. Shake it up and pour over salad. Refrigerate several hours, covered.

Add Parmesan when serving.
